SUNFLOWERS THAT PRODUCE EDIBLE SEEDS
Would you like to grow your very own sunflowers for snacking and cooking? Well, here you go!
Choose one or more of these eight varieties and you can do just that. There is a big range of heights and maturity times. On the early end are Cutting Gold, growing to around 5’ tall and maturing in 50-60 days. Also, on this end of the spectrum is Salt ‘N Roast, growing 6-7’ tall in about 55 days. At the opposite end is Mongolian Giant, taking a full 90-100 days to grow 12’ tall. The seeds of the Mongolian Giant can be up to two inches long!
A note on maturity times: these are an estimate of the dates it takes from planting a seed to Having the sunflower plant produce a mature seedhead. You will want to allow another 10 days to two weeks or more before picking the heads and harvesting the seeds. How to harvest and roast sunflower seeds.
Some varieties will require a ladder to reach the dried seedheads. Make sure you have a person or persons assisting you with the collection, if for no other purpose than to hold the ladder steady. Backing up a bit, you may want to cover the seedheads with a breathable fabric that will allow them to dry but at the same time keep the birds from getting to the harvest. Or cover some and leave the rest for the birds. That’s up to you!

PERENNIAL SUNFLOWERS
Just about all sunflowers are annuals, growing, producing flowers and seeds, and then dying off during one season. There is, however, a lovely perennial sunflower by the name of Maximillian, that the average gardener can try his or her luck at. Should you succeed, you will have these 6–8-foot tall, graceful plants blooming in mid-September well into October when just about everything else has run its course. The Maximillian sunflower is winter hardy in USDA Zones 4a to 10b.
If you happen to live in USDA Zones 8, 9 and 10 here are three more varieties of Sunflowers that may prove to be perennial in your area: Italian Green Heart, Italian White and Soluna Mix. These three are members of a different species—Helianthus debilis—than the annuals, which are Helianthus annuus. I say why don’t you plant one of these this year and see if it comes back next year. If not, at least you got one year of color. If so, then you are onto something special!

In these pages you will find deep discounts on seeds leftover from previous years. These seeds have been kept in a cool and dry location and so should still have good viability.
